If you’re looking for something different and exciting, then you’ve got to try this Mediterranean baked chicken. This recipe uses healthy, wholesome ingredients such as chicken breast and aromatic herbs.
The chicken is grilled to perfection and baked in the oven with a very generous topping of mozzarella cheese. The Mediterranean diet went mainstream a few years ago and gained traction worldwide. Many people enjoy this type of cuisine at restaurants and in their homes.
Chicken breast, Rosemary, Oregano, Baby tomatoes, Basil, Ginger powder, Salt, White pepper, Arrabiata sauce, Mozzarella cheese.
Thoroughly wash the chicken breasts. Add olive oil to a grill pan and turn on the temperature to medium-high heat. Add the chicken breasts and grill for seven to eight minutes per side and flip onto the other side. Sprinkle with salt, white pepper, garlic powder and rosemary. Once the chicken breast has an internal temperature of 165 Celsius, it is ready. Set the chicken aside and let it cool for five minutes.
Add the arrabiata sauce to a baking tray. Slice the baby tomatoes in halves, add it to the tray along with the grilled chicken breasts. Sprinkle the top of the chicken breasts with oregano,
Add grated mozzarella cheese and cheddar cheese to the top of the baked chicken. Place the baking tray in the oven and bake at a temperature of 145 Celsius for twenty minutes until the cheese melts, and the tomatoes have roasted to perfection.
Remove the tray from the oven and serve with your favourite side-dishes. That’s it, the dish is ready to enjoy with your family and friends. This Mediterranean dish is easy to make at home.
You can serve this dish with a healthy Greek Salad that is made with tomatoes, cucumbers, red onions, olives, and feta cheese.
