Tomato paste is a concentrated form of tomato sauce, characterized by its dark, rich maroon color. This versatile ingredient offers an intense tomato flavor and is commonly used in various cuisines around the world. In this recipe, tomato paste serves as the base for the sauce. When combined with heavy cream, it creates a lovely pink hue that has gained popularity in many restaurants globally. Strips of beef salami add a distinct meaty flavor to the rose pasta. Sage leaves serve as a unique addition, contributing subtle woody, piney, and peppery notes to the dish.

  • 80 grams Tomato Paste
  • 1 Onion – finely cliced
  • 150 ml Heavy Cream
  • 8 Garlic cloves – sliced
  • 240 grams Penne Pasta

Flavour enhancers and Spices

  • 3 Sage leaves – Finely Sliced
  • 4 tbsp Pasta Water
  • 2 tbsp Cooking oil
  • 60 grams Beef Salami – cut into thin strips
  • 1/2 tbsp Oyster sauce
  • 1 tbsp Chili flakes – Gochugaru, Mild flavour
  • 1/4 tsp Nutmeg powder

Instructions

  • Caramelize the onions and garlic: Add oil to a pan, then add the onions, salami, sage leaves, and garlic. Cook until the onions are caramelized, which should take five to eight minutes. Add a teaspoon of gochugaru. Mix and add the tomato pasta. Then add the heavy cream and oyster sauce. Let the sauce simmer for five minutes.
  • Prepare the pasta: Cook the Pasta until Al dente, following the instructions on the back of the package. Past pasta typically takes 8 to 9 minutes to cook in boiling water. Mix the pasta with the sauce and stir for one to two minutes, then switch off the heat. Garnish with Grana Padano cheese and a sprinkle of gochugaru.
