Marinate the Chicken: Place the chicken thighs in a baking dish. Add the Greek yogurt, minced garlic, paprika powder, nutmeg powder, salt and black pepper. Mix the marinade into the chicken to ensure that the underneath of the chicken is coated with the marinade.

The marinade will impart powerful flavors into chicken thighs. For best results, marinate the chicken thighs for 1 to 3 hours, or until the next day. Keep the chicken in its marinade in the refrigerator.

Bake the Chicken: Set the temperature to 375°F (190°C). Transfer the baking dish to the oven. Bone-in thighs will take 60 minutes to bake in the oven. The chicken is cooked when it reaches an internal temperature of 165°F (75°C). For a crispier finish, you can turn on the broiler for the last two minutes of baking and this will result in a lovely charred top which has a ton of flavor.

  • 1 cup Fresh Parsley finely chopped
  • 4 Garlic cloves minced
  • 1 tsp Paprika powder

  • 1/2 tsp Black pepper
  • 1/2 tsp Garlic powder
  • 1/2 tsp Onion powder

Instructions

  • Wash the chicken: Rinse the chicken thighs, pat them dry and place them on a casserole.
  • Marinate the chicken: Pour in the yogurt and olive oil into the casserole. Squeeze the lime and add the ginger paste. Add the finely chopped parsley, garlic cloves, paprika powder, cumin powder, nutmeg powder, salt, black pepper, garlic powder and onion powder.
  • Mix the ingredients: Rub the spices into the chicken thighs. Make sure to place the chicken skin facing up. Cover the casserole with cling wrap and leave the marinated chicken in the fridge for 30 minutes.
  • Bake the chicken: Preheat the oven to 400'C. Remove the chicken from the fridge and put it into the oven. Bake the chicken for one hour and ten minutes.
  • Garnish: Garnish with parsley to serve.
