Most people think cauliflower soup is one-dimensional, but this Cauliflower soup is surprisingly good. Considered a humble veggie, cauliflower is a delicious and comforting dish. Cauliflower is regarded as the chameleon of vegetables.
There are many different ways to prepare the vegetable. In soup, cauliflower takes on a nutty taste and transforms into a warm, cosy bowl of goodness. This incredible soup transforms into something extraordinary when paired with rustic garlic bread or sourdough bread.
In Europe, Cauliflower soup was the go-to meal for cold winters. It is high in vitamins and fibre, and when it is loaded with grated cheddar cheese, it is absolutely delicious. The best thing about cauliflower soup is that it has a mild flavour.
This means that it will soak up whatever flavours you add to the pot. If you want a garlicky flavour, add tons of garlic at the beginning of the cooking process. Turn up the heat with paprika or chili powder. And if you prefer a vegetarian option, skip the chicken stock cube for a vegetable stock cube.

Choose a cauliflower that is fresh, creamy, and uniform in colour. Onions add a sweet and fragrant depth to the cauliflower soup. Paprika powder adds a slightly sweet flavour, whilst nutmeg imparts an earthy warmth to the dish. A pinch of salt and black pepper provides flavour.
Heavy cream creates a velvety sauce that makes the soup creamy and smooth. Olive oil adds a fruity and peppery taste. Consider using butter as an alternative; it will add a powerful depth and richness to the cauliflower soup.
Spices such as ground cumin, rosemary, and cayenne pepper will increase the earthiness and heat of the cauliflower soup. Make sure to remove the rosemary sprig prior to using the immersion blender.
Cook the Onions and Garlic. Preheat the pot. Add olive oil and butter to the pot. Add the onion and cook for two minutes. Add two tablespoons of water. Cook for six minutes. Add the garlic, spices and celery.
Chop the Cauliflower: Chop the cauliflower into bite-sized florets. Add the cauliflower to the pot and stir. The spices will mix with the cauliflower.
Add Water: Add water and the chicken stock cube. Mix the contents in the pot and stir well. Cook for approximately thirty minutes on medium-low heat. After thirty minutes, the cauliflower should have softened up. Use an immersion blender to create the cauliflower soup. This step should take three minutes. Using a standing blender or a glass food processor is also possible.
Add the cream: After the soup is blended and smooth. Add the cream and blend again. Return to the pot and cook for five minutes on medium-low heat. Cauliflower soup is an easy recipe that uses minimal ingredients. It is perfect for a warm and cosy night at home. Add a few pieces of pan-fried salami to create a fascinating medley of flavours. Consider adding a handful of croutons to add crunch.
Choose fresh and firm cauliflowers. Look for tightly packed florets with no brown spots or discoloration. Make sure to thoroughly wash the cauliflower. Chicken stock cubes can be replaced with vegetable stock cubes. Blend all the cauliflower to ensure the creaminess of the soup. Different toppings can be used, such as Grated cheese, Chopped fresh herbs, Croutons, or rosemary-flavored olive oil. Cauliflower soup is best served hot.
Serve this delicious soup with Garlic Bread, Marinated olives, or Kale Salad. Other side dishes include Grilled Brussels sprouts or Grilled Asparagus. A fresh salad such as Greek Salad will complement Cauliflower soup.
Store in the fridge for two to four days. Many soups can be frozen for up to three months, and cauliflower is one of them. Portion the cauliflower soup according to the quantity made and store it in a freezer-safe container. Defrost in the microwave or on the stovetop. Since this soup is smooth and velvety, defrosting will not affect its texture.
