Many people are looking for a quick and easy salad for hot summer days, and this Asian cucumber salad is absolutely perfect for those occasions. This salad is a flavourful light dish with an incredible combination of flavours. In fact, the crunchy cucumbers coupled with a savoury Asian dressing provides a comforting side dish that will brighten up your main meals.
Cucumbers are incredible. They have these naturally cooling properties that can provide many alkaline benefits to the body. Cucumbers are loaded with Vitamin E which is great for hydration and skin health.
Cucumber, Fish Sauce, Rice Vinegar, Black Sesame seeds, Brown Sugar, Gochugaru, Salt, Sesame Seed oil.
Use Firm and Fresh Cucumbers for a Crunchy salad. Fish Sauce can be substituted with soy sauce. Rice Vinegar is preferred for its light flavour. Apple Cider vinegar can be used in its place if you would like a more tart taste. Brown Sugar adds sweetness. The Gochugaru is instrumental to this recipe, the only substitute that can be used in its place is Pul biber, which are turkish red pepper flakes. Both chili flakes have a similarly spicy, yet fruity taste. Normal chili flakes would be too spicy. However, if you can handle that level of heat, you can use it. Sesame seed oil adds a warm and nutty flavour to this salad.
The first step is instrumental to this recipe, you have to cut the cucumbers in a vertical manner, and then cut it into halves. The next step is to salt the cucumbers with 1/2 tsp of salt. Let it rest for approximately 10 minutes. This step will draw out any excess liquid from the cucumber, after this process, make sure to drain the water.
Then add the brown sugar, gochugaru, black sesame seeds, sesame seed oil, and rice vinegar. Mix well. That’s it. Your crunchy cucumber salad is ready to eat. You can also chill it in the fridge and serve it later. If you decide to store the cucumber salad in the fridge, the flavours will amplify, creating a very intense Asiatic flavour that is absolutely lovely with hot and spicy noodles.
