For a crunchy salad, use firm and fresh cucumbers. You can substitute fish sauce with soy sauce if needed. Rice vinegar is preferred for its light flavor, but if you prefer a more tart taste, you can use apple cider vinegar instead. Brown sugar adds sweetness to the dish. Gochugaru is essential to this recipe; the only suitable substitute is Pul biber, which are Turkish red pepper flakes. Both gochugaru and Pul biber have a similar spicy yet fruity flavor. While normal chili flakes may be too spicy, you can use them if you can handle that level of heat. Finally, sesame seed oil contributes a warm and nutty flavor to the salad.
The first step in this recipe is instrumental: you have to cut the cucumbers vertically, then cut them in half. The next step is to salt the cucumbers with 1/2 tsp of salt. Let it rest for approximately 10 minutes. This step will draw out any excess liquid from the cucumber. After this process, make sure to drain the water.

Then add the brown sugar, gochugaru, black sesame seeds, sesame seed oil, and rice vinegar. Mix well. That’s it. Your crunchy cucumber salad is ready to eat.
