Today, we are making Barbecue chicken leg quarters. Prepare to engage all your taste buds with a blend of smoky, sweet, salty, tangy, and spicy flavors. The first bite of these juicy chicken leg quarters will pleasantly surprise you with a subtle kick of heat.

You won’t be able to stop eating this chicken, as it is sure to satisfy your cravings completely. This barbecue quarter chicken features three different spicy powders: ground cayenne pepper, red chili flakes, and red chili powder. This unique combination of spices adds a delightful twist to the traditional flavor of barbecue chicken.

We chose chicken leg quarters for this recipe, which include both the thigh and the drumstick. Chicken quarters are ideal for providing rich, juicy meat. The succulent texture readily absorbs flavors, especially when paired with bold marinades. Garlic cloves contribute an earthy flavor to the dish. One of the best aspects of garlic is that it sweetens as it caramelizes, adding depth and warmth to the overall flavor profile.
Barbecue sauce, with its smoky, tangy flavors, coats the chicken leg quarters, creating a glossy glaze. This is a key component for achieving a delicious outcome. Use high-quality olive oil to sauté the ingredients, as it offers rich and fruity notes. Soy sauce serves as the savory element in the recipe, balancing the sweetness of the barbecue sauce with a hint of saltiness. Fresh scallions, with their mild onion flavor, add brightness to the dish and are primarily used as a garnish.
Butter adds a creamy richness to the barbecue sauce, enhancing the overall flavor. Ginger powder adds warmth and a slight sweetness, while red pepper powder provides a moderate heat without overpowering the barbecue sauce. Red pepper flakes can add extra heat and spiciness, and cayenne pepper can be included for those who enjoy intense heat, though it can be omitted for a milder dish.
Mix all the spices with the soy sauce. Add 1/4 cup of water to dilute and increase the sauce’s volume. Add 2 tablespoons of butter to a preheated pan over medium-low heat. Cut the chicken into quarters, as shown in the picture. This will ensure the chicken is cooked through, allowing the flavors to penetrate the meat.

Place the chicken quarters on the grill, add butter, and cook for 8 minutes on each side over medium-low heat. Cooking the chicken on medium-low heat with the lid closed will ensure the meat is thoroughly cooked whilst remaining tender and moist. Make sure to cover the pan with foil or a lid while cooking the chicken. Repeat, turning the quarter chicken and cooking for another 8 minutes on each side, and make sure the lid is closed.

Notice the beautiful golden color; if you have followed the instructions, the chicken leg quarters will be cooked through to the center of the bone, and you will no longer see any raw meat. Begin to apply the sauce with a basting brush. During this step, the pan should be on the lowest heat. Generously coat the quarter chicken with the spicy barbecue sauce. Cook both sides for 2 minutes, and the chicken will be ready to serve.

To ensure the meat is cooked through, cut into it before grilling. Covering the pan will help cook the quarter chicken thoroughly and prevent it from drying out. Make sure the chicken is fully cooked before applying the barbecue sauce. You can check this by poking the meat with a knife; it should be white inside.
You can adjust the spice level by varying the amounts of red chili flakes and red chili powder. The quantity of cayenne pepper can stay the same, as it adds flavor. If you prefer a milder taste, you can replace cayenne pepper with paprika powder. While paprika offers a lighter flavor, the red chili provides the heat in this dish. Salt has been omitted because ginger powder and soy sauce are naturally salty. Be sure to taste the dish to determine if the salt level is adequate.
Grilled corn on the cob with melted butter will neutralize the spiciness of the quarter chicken. Coleslaw will add a crunchy texture to the tender chicken. Potato salad is a classic side dish that will balance the spicy, salty flavors of the chicken. Cornbread adds sweetness to the dish and delivers a more satisfying sensation to your taste buds.
Ensure that the Quarter chicken has reached room temperature. Store it in the fridge in an airtight container for three to four days. You can freeze it for three months.
