Today, we are making steak bites with garlic butter. This is a delicious and indulgent meal that is perfect for any occasion. Butter and garlic are among the top combinations for enhancing the flavor of steak.

Choosing a good cut of beef, such as sirloin or tenderloin, will transform this meal into a savory experience that is hard to resist. The steak is generously seasoned with pepper and salt, allowing for the natural flavors to come through. The steak will have a “soft and tender” texture on the inside, whilst the exterior will be crisp and salted, with a buttery center.
Ribeye steak, Butter, Leeks, Cooking Oil, Paprika, Garlic Powder, Salt, and White pepper powder.
Select a well-marbled ribeye steak. It’s important that the beef is at room temperature before you cook it, as this lets the fibers relax, resulting in a tender texture rather than a tough one. If you are using a thick-cut frozen steak, allow about 60 to 90 minutes for it to defrost completely.
An important aspect of this recipe is the seasoning for the steak. We recommend using paprika powder; you can choose from smoky or spicy varieties according to your taste. Alternatively, cayenne pepper or chili powder can be used instead of paprika. Consider adding a few sprigs of fresh thyme or using dried thyme. Garlic powder and white pepper powder will also enhance the flavor. Leeks can add extra depth to the dish, but they can be omitted if you do not have them on hand.
Wash the rib-eye steak, trim excess fat, and cut into cubes. Set the temperature to medium-high, add cooking oil and butter to a pan, and when the butter starts to melt and sizzle, add the steak.

When the steak turns from deep red to brown on the sides, add the garlic and leeks. Sauté it for two minutes on medium-high heat.

Cook for an additional 6 to 7 minutes for medium-well. If you are aiming for rare, the total cooking time will be 3 to 4 minutes at high heat.

The Steak Bites with Garlic Butter are ready to be served and enjoyed. To enhance the presentation, sprinkle some fresh parsley on top. The spices used in this recipe can also be applied to other cuts of beef, such as flank, as well as offal like beef tripe, liver, and heart.
Cut the beef into one-inch cubes to create a visually appealing dish. One of the key elements for cooking steak perfectly at home is recognizing that different cuts of meat require tailored approaches concerning temperature, friction, and finishing techniques. While high heat is common in many kitchens worldwide, some prefer a cold-start technique for thicker cuts; in this case, the rib-eye steak should remain whole and uncut.
It is essential to use a pre-seasoned cast-iron pan. As the pan heats up, it will create an excellent sear on the beef. Cook each side for 1 minute, then finish the steak in the oven at high heat for 8 minutes for medium-well. To avoid burning the garlic and imparting a bitter taste to the oil, add it at the right time—after the initial searing of the steak. You can brighten the flavors by adding lemon juice and more butter to the dish.
There are so many options that pair well with this dish. Consider a Rocket and Red Pepper salad. If you’re craving a more substantial meal, consider a bed of creamy mashed potatoes. Garlic bread also works well for this recipe.
Store the Steak butter & Garlic butter in the fridge for 2 to 3 days—reheat in a pan. You can add a little bit more butter or olive oil. Steak bites with garlic butter freeze well. Thaw outside of the freezer for two hours. Then reheat on the stove or in the microwave for two minutes.
