Today, we’re making Lime & Butter Chicken. If you haven’t tried this recipe before, you’re in for an exciting experience. Chicken leg quarters are favoured in many Asian countries due to their tender texture and juicy flavor.

Chicken leg quarters have a higher content of connective tissue and fat. This characteristic contributes to a richer and more indulgent flavor profile compared to other chicken cuts. When prepared with the skin intact, the skin achieves a desirable crispness, while the thighs and drumsticks preserve their moisture, thereby enhancing their overall taste.

Choose medium- to large-sized chicken leg quarters. The grilling process will yield a reduction in the size of the chicken leg quarters by approximately one-third, this results in a desirable combination of crispy skin and tender meat. The addition of paprika powder introduces a subtle heat; however, alternatives such as chili powder or cayenne pepper may be utilized.
Lime juice serves as a pivotal ingredient, imparting a vibrant burst of citrus flavor that distinctly enhances the chicken leg quarters. Date syrup, a unique component of the recipe, and it is commonly used in Middle Eastern cuisine and is derived from real dates. Date syrup can be found at various Middle Eastern supermarkets and online retailers. Alternative sweeteners, such as honey, maple syrup, or pomegranate syrup, may be used in place of date syrup. The inclusion of butter, paired with date syrup, elevates the overall flavor of this dish significantly.
Rinse the chicken and pat them dry. Slice the tops of the chicken leg quarters with a knife; this will help the flavors penetrate the chicken’s flesh. Preheat the grill pan on medium-low heat. Slice the limes.

Add butter to a grill pan and place chicken quarters skin side down, sprinkling with salt. Grill for 4 minutes until the skin is browned, then flip, adding a pinch of salt and more oil/butter if needed. Grill for another 4 minutes. Repeat this process three times, grilling each side for a total of 12 minutes to ensure even cooking. Press down on the chicken for even browning, as extra minutes enhance flavor and create a delicious crust.

When applying pressure to the chicken using tongs, it is crucial to ensure that the surface of the chicken makes contact with the heated pan. During this process, monitor the chicken to prevent the skin from burning. At this stage, it is essential to ensure that there are no raw spots remaining on the chicken. The skin should achieve a deep brown hue, indicating proper cooking. You may observe that some fat is being rendered, which is a positive indication.
While the chicken is grilling, squeeze fresh lime juice into a bowl. Subsequently, incorporate paprika powder and date syrup into the bowl. Pour the marinade over the chicken leg quarters, and then turn the chicken to ensure that the meat is thoroughly coated with the citrus-infused marinade. After allowing the chicken to marinate for two minutes, transfer the leg quarters to a plate. Allow the chicken to rest for an additional two minutes before serving.
