Green pea soup is a delicious and comforting dish that captures the simplicity of home-cooked meals. Made mainly with green peas and a little bit of onion and garlic, this soup is rich in savoury flavours. Perfect as a starter, this soup can be served with most main meals.

In this recipe, the spices are neutral, allowing the green peas’ flavours to shine through. Green pea soup has an earthy, nutty, and robust taste. When pureed into a smooth, silky soup, it is more refined than a heavy meal. If you want a meatier flavour, consider browning some salami while sautéing the onions and garlic.
Green pea soup is one of the oldest surviving dishes in the world, predating many modern dishes by thousands of years. This dish first appeared in Ancient Greece and Rome. Street food vendors used to sell hot bowls of pea soup to the public in Athens. So popular was this dish that it appeared in Aristophanes’ comedies The Birds and The Knights, written 2,400 years ago. Green pea soup was considered a filling meal for soldiers who needed long-lasting and transportable rations.

Use Frozen or Fresh Green peas for this recipe for a vibrant green colour. Using Frozen green peas is a convenient and accessible option for most people. Fresh green peas are seasonal; they are not always available at the supermarket, but if you do have access to them and would like to use them, here is how to clean and prepare them.
First, remove the peas from the pods. Snap both ends of the pods, then open them with your fingers and remove the peas. This process is called “shelling”. After shelling, rinse the peas in running water to remove impurities such as dirt, fibres, or debris, and set them aside.

Butter enhances the flavour of the onions and garlic. Garlic powder, along with the white pepper powder, adds extra savouriness. A chicken stock cube will add depth to the soup.
Chop the onion and garlic. Add butter and olive oil to a preheated pot, and sauté the onion and garlic for four minutes on medium-low heat.

Add the green peas to a pot with two cups of water. Set the temperature to medium-low and boil for 15 minutes. Add the spices such as salt, white pepper powder, garlic powder, and the chicken stock cube to the pot.

Fresh green peas will boil for twenty-five to thirty minutes, or until tender and soft. The colour of the peas will turn darker green after cooking. Canned green peas will result in a lighter shade of green.

Once the green peas are cooked, use an immersion blender to blend until smooth. If the soup feels too thick and dense, add a quarter cup of water to thin it out. Serve the delicious, green pea soup with a buttered baguette.

There are many ways to garnish a pea soup; consider adding a dollop of cream or a few sprigs of dill or mint to brighten up the flavour. Some people like to add lemon zest on top for a more citrusy taste. You can also grate some Parmesan cheese or Grana Padano on the soup for a cheesier flavour.
Green pea soup is a balanced dish, rich in protein and fibre, packed with vitamins, and low in fat. To complete the meal, serve the green pea soup with carbohydrates such as Garlic bread, Baguette, or Sourdough. This tasty soup also pairs well with Buttered toast, seasoned Croutons, Pita bread, or even Grilled cheese toast.
Make sure to cool the soup before refrigerating it. The soup will last for up to four to five days in a refrigerator. If you plan to keep the soup for an extended period, freeze it. Portion it out and then freeze, so that it will be convenient to thaw and serve. To freeze the green pea soup, transfer it to a freezer-safe container or zip-lock bags. Make sure that the soup has completely cooled before transferring it. The soup can be stored in the freezer for up to three months.
To reheat the soup, use the stovetop or the microwave. When reheating the entire pot of soup, add about two tablespoons of water, stir to combine, and then reheat on the lowest setting to prevent burning. For the microwave, add one tablespoon of water and stir to mix the soup. Then, cover the soup with a microwave-safe lid and reheat until hot.
