Chicken & Mayo Sandwich

Chicken & Mayo sandwich is a recipe from my childhood. Quick and easy to make, and a lovely break from the usual menu. Exploring different recipes from newspaper clippings was a favorite pastime, and stumbling upon this recipe was quite a joy. I ate this sandwich often and once you taste it, it will become a regular meal in your home.

Ingredients for Chicken & Mayo Sandwich.

Sliced Bread, Chicken Breasts, Lettuce, Mayonnaise, Butter.

This is a very simple lunch time meal to prepare on a busy day. Choose any mayonnaise that you prefer for this sandwich. Butter can be salted or unsalted. It is best to used sliced white bread, however if you prefer brown bread, you can also go with that, though it is recommended for you to add more butter for grain breads, this will add more flavor to this Chicken and Mayo Sandwich.

Instructions

Cook the chicken: Drizzle olive oil in a pan and add your chicken breasts. Add your spices, Rosemary, a sprinkle of salt and pepper. You can add a touch of Cajun spice for heat. An alternative for Cajun spice is cayenne pepper or paprika powder. Flip the chicken breasts regularly.

Rest the chicken: After your chicken breast has cooked, it should be perfectly browned. This will take six minutes per side on medium low heat. Remove from the pan. Allow your chicken breasts to rest for five minutes on each side. And, then tear apart with a fork.

Lettuce, Mayo and Bread: Thoroughly wash your lettuce leaves. Let it dry or dab with a kitchen towel. Mix with mayonnaise. Butter your bread and toast on the pan.

Arrange on your bread and cover, thereafter serve. Your sandwich is now ready to eat. Enjoy.

What to Serve your Chicken & Mayo Sandwich?

Consider serving alongside potato chips & crisps. Spicy french fries will add a lovely crunch. Pickles and a green garden salad will also work well.

How to Store your Chicken & Mayo Sandwich?

Wrap in a foil and place in an airtight container, thereafter put it in the fridge. You can store it for two days max. Alternatively, you can grill your chicken as shown and shred it. You can also wash your lettuce and let it dry. Store in separate containers and use when needed. It will last for three to four days.

Chicken and Mayo Sandwich is underrated! Most people have never heard of it. Once you try it, there is no going back. Serve alongside your favorite crisps and soda, and you have the perfect afternoon meal. Your kids will love it and your guests will keep coming back for more!

Ingredients

  • 400 grams Chicken Breasts.
  • 150 grams Lettuce
  • 6 tbsp Mayonnaise.
  • 1 sprig Rosemary
  • 8 Slices Bread

Spices

  • 3 grams Salt
  • 3 grams Pepper.

Instructions

  • Cook the Chicken: Add olive oil to your pan. Season chicken breasts with rosemary, salt and pepper. Cook the chicken breasts for six minutes on each side.
  • Make the Filling: Wash your lettuce several times, and then slice it up in order to reduce its mass. Add a generous amount of mayonnaise.
  • Butter the Bread: Butter the sliced bread on one side only and toast on the buttered side. Arrange and serve your sandwich.
