Red pepper is an absolute necessity for this salad, it has a sweeter taste that works with the Balsamic vinegar and olive oil combination. Green bell peppers are earthy and sharp whilst yellow peppers are somewhat mute in its taste.
When it comes to salad dressing, you might be surprised by how just three ingredients—balsamic vinegar, olive oil, and salt—can create a bright, tangy, and highly flavourful dressing. This simple salad dressing works well with the crunchy cucumbers and the sweet red bell peppers.
Wash the cucumber and red bell pepper. Slice into cubes. Add the vegetables into a bowl. Add balsamic vinegar, olive oil and salt. Mix well until combined. Serve immediately.
This salad can pair with many different types of main meals. You can serve this salad with Lentil Soup, Grilled Fish, Lamb Curry, Lamb Kofta, Chicken Shawarma, Cajun Shrimps and more.
This salad can be stored in the fridge for one to two days. You can also chop up a large amount and store for longer period of time in the fridge without adding in the salad dressing, this will ensure that the vegetables stay fresh.
