In this recipe, the spices are neutral, allowing the green peas’ flavours to shine through. A dollop of cream creates a smooth, harmonious soup.

Ingredients

Green peas, Butter, Onion, Garlic, Fresh cream, Water, Garlic powder, White pepper powder, Salt, Chicken stock cube.

There are three types of Green peas that can be used for this recipe, fresh green peas, frozen green peas or canned green peas. For this recipe, we’ve chosen to use green peas from a can. These type of peas will create a light shade of ”green pea soup”. If you want a more vibrant in colour, green pea soup, use fresh green peas or a combination of fresh green peas and the canned version.

Frozen green peas are also a good option. Most of the nutrients are preserved in the freezing process. Butter is used to sauté the vegetables, it will also add to the creamy flavours.

Onions and garlic add a savoury flavour. Garlic powder along with the white pepper powder adds extra savouriness. Chicken stock cube will add depth to the soup. Fresh cream will smooth out the flavours of this soup.

Instructions

If you are using canned green peas, drain off the brine and rinse the peas under running water. When using fresh green peas to make green pea soup, first remove the peas from the pods. Snap both ends of the pods, then open them with your fingers and remove the peas.

This process is called “shelling”. After shelling, rinse the peas in running water to remove impurities such as dirt, fibres, or debris, and set them aside.

Chop the aromatics, such as the onion and garlic. Add butter and olive oil to a preheated pot, and sauté the onion and garlic for four minutes on medium-low heat.

Add the green peas to a pot with two cups of water. Set the temperature to medium-low and boil for 15 minutes. Add the spices such as salt, white pepper powder, garlic powder, and the chicken stock cube to the pot.

Fresh green peas will boil for twenty-five to thirty minutes, or until tender and soft. The colour of the peas will turn darker green after cooking. Canned green peas will result in a lighter shade of green.

Once the green peas are cooked, use an immersion blender to blend until smooth. Add the fresh cream and blend once more until all the ingredients are well combined. If the soup feels too thick and dense, add a quarter cup of water to make it less dense. Serve the delicious, creamy green pea soup with a buttered baguette.
