This dish achieves a restaurant-quality flavor by harmoniously blending the sweetness of ripe tomatoes with the earthiness of tender zucchini. Tomato and Zucchini Soup has its origins in Mediterranean cuisine, where both vegetables serve as staple ingredients. Tomatoes create a rich base for this dish, and when paired with zucchini, they offer a delightful flavor combination. Choose ripe, soft tomatoes for the best taste. Zucchini adds a mild, creamy texture without the need for heavy cream. Caramelizing garlic and onion brings sweetness, while herbs like basil, thyme, and oregano enhance the soup’s flavor.
In a large pot, add cooking oil over medium-low heat. Add the chopped onions and saute until caramelized. Add the garlic and cook until lightly browned.

Stir in the chopped tomatoes and diced zucchini, cooking for five to eight minutes until the vegetables have softened. Lightly sauteing the tomatoes and zucchini adds more flavour to the soup. Add the tomato paste and spices such as thyme, oregano, basil, chicken stock cube, and black pepper powder.

Simmer for 20 minutes. For a smooth soup, use an immersion blender to puree until the desired consistency is reached. This takes about two minutes. For a chunkier soup, blend for one minute.

Stir the soup and remove the stringy bits of celery. This soup can be enhanced with a sprinkle of Parmesan or Grana Padano cheese and topped with croutons for extra crunch. The flavours will increase after a day or two. Tomato & Zucchini soup is a nourishing and flavourful dish.
Tomato & Zucchini soup can be enjoyed in many ways. You can elevate the meal with a side of garlic bread or a grilled cheese sandwich. Sprinkling fresh herbs on top, such as parsley, will bring out the flavours beautifully. If you want to add more creaminess, consider adding a dollop of sour cream or yogurt.
Transfer the soup to an airtight glass container and refrigerate for up to 5 days, or freeze for up to 3 months. Thaw frozen soup at room temperature and reheat in the microwave or on the stove.
Roast tomatoes and zucchini before adding them to enhance flavors. Blend for a smoother texture and remove the stringy celery stalk after cooking. Use fresh chicken stock for better flavor and add spices like cumin or smoked paprika for heat. For extra protein, mix in shredded chicken, and for tanginess, a drizzle of balsamic vinegar works well. Add heavy cream for extra creaminess.
