Tomatoes, Garlic, Onion, Parsley, Worcestershire sauce, Tomato paste, Olive oil, Paprika, Basil, Oregano, Salt, Pepper, and Brown Sugar.
The primary ingredient in tomato relish is, of course, tomatoes, which provide a robust base of sweet and tart flavors. Garlic, onion, and parsley introduce freshness, while Worcestershire sauce and tomato paste contribute an intense savoriness. Extra virgin olive oil adds a smooth and fruity flavor during the sautéing process. The spices—paprika, basil, oregano, salt, pepper, and brown sugar—enhance the relish’s overall taste.
Chop the garlic and fresh parsley. Grate the tomatoes and onion, and gather all the ingredients. If you prefer to use a jar of diced tomatoes, it will reduce the cooking time to twenty minutes. Preheat a pot over medium-low heat. Drizzle in the olive oil, add the garlic and spices, and cook for 8 minutes to let the garlic caramelize.
Add the grated tomato, Worcestershire sauce, and onion to the pot. Pour in extra olive oil and stir to mix everything well. Cook for thirty-five minutes. Stir in the chopped parsley in the last five minutes of cooking. Let the relish rest for five minutes before serving.
Grilled meat pairs exceptionally well with tomato relish. Its tangy flavor cuts through the richness of grilled meats like chicken, barbecue ribs, grilled steak, or sausages.
Store in the fridge for two to three days. Tomato relish is served cold.
