Spicy sausage pasta is a delicious dish with bold flavors, made with savory sausages that have a bit of heat and caramelized onions that offer a subtle sweetness. This combination creates an unforgettable meal.

This recipe features a combination of flavors that include sausages seasoned with spices such as fennel, garlic, and chili. The cooking process allows the sausages to brown in the pan, which releases fat and infuses the sauce with these spices, contributing to the overall flavor of the dish. In Italy, Northern regions typically prefer milder sausages, while Southern regions are known for a spicier variation. Pasta and sausages have been integral to Italian cuisine for over 2,000 years.

You can use any spicy sausage you like! Just keep in mind that fennel, garlic, and red pepper flakes are key ingredients for that perfect kick. Andouille sausages bring a smoky, sharp flavor to the party, while chorizo adds flavour with its rich paprika and cumin.
Penne pasta was used for this recipe, but medium-sized pasta like Fusilli, Rigatoni, Ziti, or Rotini works just as well. You can pick your favorite sausage too—Italian or regular, it’s entirely up to you! Using tomato paste instead of pasta sauce or fresh tomatoes gives this dish an extra kick of flavor.
Don’t forget to caramelize the onions and garlic; they’ll bring a lovely sweetness to the mix. Adding celery gives it a savory touch, and a dash of paprika powder brings just the right amount of warmth. Oregano adds a nice earthy, woody note that pairs perfectly with the sausage.
Slice the onions, mince the garlic and celery, and slice the beef sausages. Sauté the onions and garlic in oil for 5-7 minutes until golden, then add the sausages. Boil salted water and cook the pasta for about nine minutes until al dente. For the sauce, mix spices and tomato paste in the pan with 1/4 cup of water.

The tomato paste will create a rich, smooth sauce that complements the sausages’ flavours. Once the pasta is cooked, drain and reserve about 1/2 cup of pasta water. Add the pasta to the sauce and mix well.

The sausage pasta is now ready to serve and enjoy with your loved ones. Garnish with Parmesan cheese or Grana Padano for more flavour. If you’re a fan of spicy dishes and want a little extra heat, feel free to sprinkle on some jalapeño chilies for garnish.
For the best flavor, use spicy sausages and slice them frozen to avoid tearing. Choose sausages with a good fat-to-meat balance for more character. Enhance the tomato paste by caramelizing garlic and onions. Don’t overcook the pasta; remove it from heat after eight minutes, as it’ll finish cooking in the sauce for an additional minute or two to achieve the perfect al dente texture.
Sausage pasta pairs well with Garlic bread or a delicious salad. Consider a Red pepper and Rocket salad with a tangy Italian salad dressing or a Balsamic tomato salad. Sautéed broccoli or Green beans would also complement the flavours of the spicy sausage pasta.
To store the sausage pasta, allow it to cool to room temperature, then place it in an airtight container. Sausage pasta can be stored in the fridge for three to five days. If you want to store it for a more extended period of time, consider freezing it for up to 2 to 3 months.
