Think of Chicken breast cubes, Turkey, Beef Knuckle Steak and more. You can also make a vegetarian version using your favourite vegetables. The heavy cream adds a ton of richness to this dish, it is integral to the flavour of this dish. If you would prefer another option, you can also use a can of light coconut cream.

One of the underestimated in this recipe happens to be the onions and garlic. We’ve used loads of it and caramelized it down to exude maximum flavour! We’ve found that the aromatics work hand in hand with the shrimp and creates an extraordinary dish.

Baby spinach or regular spinach will do, just make sure you cut the regular sized spinach with a scissors.

Instructions

Start with finely chopped garlic cloves and sliced onions. Add a generous drizzle of grapeseed oil or cooking oil to the pot. Make sure to stir the aromatics. It will take five to six minutes for perfect, caramelized browning.

Medium low heat is recommended to ensure that the aromatics do not brown too quickly and that the natural sugars of the alliums (Onions and garlic) are released naturally. This step is so important and perhaps the most important of them all. Cooking involves a lot of technique, when you follow the steps properly, you will create a timeless masterpiece in the comfort of your home.

During the time in which your onions and garlic will have reached caramelized perfection; add the smoked paprika, black pepper, dried basil and dried oregano. Mix the spices to ensure that they are thoroughly mixed into the garlic and onion. Thereafter, add your washed and chopped spinach.

Stir until the spinach wilts down. Ingredients

  • 80 grams Sun-dried tomatoes
  • 400 grams Shrimp
  • 3 cups Spinach – Chopped
  • 8 Garlic Cloves – Diced
  • 1 Onion – Sliced

Liquids

  • 175 ml Heavy cream
  • 4 Tbsp Grapeseed Oil

Spices

  • 1 tsp Basil
  • 1 tsp Oregano
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 1/2 tbsp Smoked Paprika Powder

Instructions

  • Preparation: Slice the onion and finely dice the garlic. Wash the spinach and cut with a scissors or chop on a board. Clean and deshell the shrimps.
  • Caramelization: Add four tablespoons of grapeseed oil to the pan, add the onion and garlic. Caramelize on medium low heat for five to six minutes until it has browned perfectly. Add the spices. Mix well.
  • Spinach and Cream: Add the spinach and mix well. Thereafter add the heavy cream. Mix again.
  • Shrimps: Lay the shrimps on top of the creamy mixture and turn every one minute. Once the shrimps have turned from a greyish translucent to pink, the dish is ready.
