Ingredients

Tomato Paste, Beef Salami, Sage leaves, Garlic Cloves, Onion, Gochugaru, Penne Pasta, Grana Padano Cheese, Heavy Cream, Oyster Sauce, Nutmeg, Grapeseed oil.

Tomato paste is a condensed version of tomato sauce. It has a dark, rich colour that is a deep shade of maroon. This versatile ingredient has an intense tomato flavour and is also widely used in many cuisines worldwide. In this recipe, tomato paste forms the foundation of the sauce.

Together with heavy cream, it creates a beautiful pink hue that has become very popular in many restaurants worldwide. Strips of Beef Salami enhance this dish by giving the rose pasta a distinctive meaty flavour. Sage leaves are the wild card in this recipe; we’ve added them in as they add a subtle woody, piney, and peppery taste.

We’ve used a generous amount of onion and garlic in this recipe, which provides a great deal of flavour to the dish. Oyster sauce, on the other hand, gives this dish that ‘extra wow factor‘. When nutmeg is added to this dish, it adds a slight nutty taste. We’ve also found that smaller pasta shapes, such as Penne, Orecchiette, and Rotelle, are ideal for rose pasta.

Instructions

Prepare the ingredients by roughly chopping the garlic cloves, and slicing the onion. Cut the beef salami into thin strips. Chiffonade the pre-washed sage leaves.

Turn the stove on and set the temperature to medium-low heat. Add a generous amount of cooking oil and butter to the pan. Allow the butter to melt into the oil. Add the garlic, onion, thinly sliced salami, and sage leaves to the pan. Sauté for approximately five to eight minutes.

This step is crucial as it will allow the flavors to meld. The onions and garlic will caramelize into a lovely brown colour, and the slices of salami strips will become crunchy with a lovely smoky flavour.

Add the tomato paste and stir the mixture once the ingredients have reached the desired browning. Ensure that they are properly immersed in one another. The next step is to add a teaspoon of gochugaru or red chili flakes. Thereafter, add the heavy cream.

Add the oyster sauce and mix the ingredients well. The sauce will have a rich, golden pink hue. This indicates that the Rose pasta sauce is almost ready. Let it simmer for one to two minutes more to ensure perfect flavors.

Taste the sauce to check the salt levels. Usually, any form of salami and butter already contains a certain amount of sodium. Adding more salt to oyster sauce is probably unnecessary; however, check to see that the desired sodium levels have been reached.

Ingredients

  • 80 grams Tomato Paste
  • 1 Onion – finely cliced
  • 175 ml Heavy Cream
  • 8 Garlic cloves – sliced
  • 180 grams Penne Pasta

Flavour enhancers and Spices

  • 3 Sage leaves – Finely Sliced
  • 4 tbsp Pasta Water
  • 4 tbsp Grapeseed oil
  • 60 grams Beef Salami – cut into thin strips
  • 1/2 tbsp Oyster sauce
  • 1 tbsp Chili flakes – Gochugaru, Mild flavour
  • 1/4 tsp Nutmeg powder

Instructions

  • Caramelize the onions and garlic: Add grapeseed oil to a pan, then add the onions, salami, sage leaves, and garlic. Cook until the onions are caramelized, which should take five to eight minutes. Add a teaspoon of gochugaru. Mix and add the tomato pasta. Then add the heavy cream and oyster sauce. Let the sauce simmer for five minutes.
  • Prepare the pasta: Cook the Pasta until Al dente, following the instructions on the back of the package. Past pasta typically takes 8 to 9 minutes to cook in boiling water.
  • Garnish: Garnish with Grana Padano cheese and a sprinkle of gochugaru.
