Caramelizing garlic and onion adds sweetness, while herbs like basil, thyme, and oregano enhance the soup’s flavor.
In a large pot, add cooking oil over medium-low heat. Add the chopped onions and saute until caramelized. Add the garlic and cook until lightly browned.

Stir in the chopped tomatoes and diced zucchini, cooking for five to eight minutes until the vegetables have softened. Lightly sauteing the tomatoes and zucchini adds more flavour to the soup. Add the tomato paste and spices such as thyme, oregano, basil, chicken stock cube, and black pepper powder.

Simmer for 20 minutes. For a smooth soup, use an immersion blender to puree until the desired consistency is reached. This takes about two minutes. For a chunkier soup, blend for one minute.

Stir the soup and remove the stringy bits of celery. This soup can be enhanced with a sprinkle of Parmesan or Grana Padano cheese and topped with croutons for extra crunch. The flavours will increase after a day or two. Tomato & Zucchini soup is a nourishing and flavourful dish.

Remove the stringy celery stalk after the soup is cooked. Freshly made chicken stock will enhance the soup’s flavour. Experiment with spices such as cumin and smoked paprika; this will give the soup a boost of heat. For extra protein, consider using shredded chicken to turn the soup into a robust meal. For a tangy flavour, add a drizzle of balsamic vinegar. If you want more creaminess, add a few tablespoons of heavy cream.
