Instructions

Chop the garlic and fresh parsley. Grate the tomatoes and onion, and gather all the ingredients. If you prefer to use a jar of diced tomatoes, it will reduce the cooking time to twenty minutes. Preheat a pot over medium-low heat. Drizzle in the olive oil, add the garlic and spices, and cook for 8 minutes to let the garlic caramelize.

Add the grated tomato, Worcestershire sauce, and onion to the pot. Pour in extra olive oil and stir to mix everything well. Cook for thirty-five minutes. Stir in the chopped parsley in the last five minutes of cooking. Let the relish rest for five minutes before serving.

  • 4 Tomatoes – grated
  • 4 Garlic cloves – minced
  • Onion – grated
  • Parsley – chopped

Spices

  • 1 tsp Paprika powder
  • 1 tsp Dried Basil
  • 1 tsp Dried Oregano
  • ½ tsp Salt
  • ½ tsp Pepper
  • ½ tsp Brown sugar

Liquid

  • 1 Tbsp Worcestershire sauce
  • 75 grams Tomato paste
  • 2 Tbsp Extra virgin olive oil

  • Roughly chop the garlic and the fresh parsley. Grate the tomatoes, onion and gather the ingredients. Preheat the pot on medium low heat. Drizzle the olive oil, add the garlic and the dry ingredients and cook for two minutes.
  • Add the grated tomato, Worcestershire sauce, onion extra olive oil and stir to mix. Cook the ingredients for thirty five minutes. Add the chopped parsley in the last five minutes of cooking. Let it rest for five minutes. Garnish with fresh herbs and olive oil to serve.
