Just picture it: golden yolks of eggs waiting to be dipped in with your freshly toasted bread. Add in some mushrooms and sausages, and you have an English breakfast. The key to the best sunny-side-up eggs is low heat, timing, and the other techniques used in this recipe.
The fresher the eggs, the better the whites. For perfect circular sunny-side-up eggs, use a mini fry pan that can fit one egg, or invest in egg moulds. They are pretty cheap and helpful, especially if you like to make pancakes.

Choose fresh, free-range eggs. Fresh eggs have a vibrant, yellow yolk with a firm texture. The rich and creamy taste will elevate the dish. When hens are raised in natural environments, they produce tastier and more nutritious eggs. Here’s a fun way to test whether an egg is fresh. Place an egg in a bowl of water. A fresh egg will sink, while older eggs will float. Did you know that older eggs are perfect for hard-boiled eggs?
Cherry tomatoes are a delightful addition to any dish. They offer a sweet and tangy flavour and caramelize when heated. If cherry tomatoes are unavailable, you can also use regular tomatoes. Consider using green bell peppers, as they can add a mild crunch and earthy undertone.
Choose your favourite type of sausage or whatever you have on hand. For a lighter option, consider using chicken or beef sausages, which have rich and robust flavours. When sausages are flavoured with garlic, herbs, or fennel, they enhance the taste of the sunny-side-up eggs. White button mushrooms and brown mushrooms are options. White button mushrooms tend to be mild and also absorb the seasoning easily, while brown mushrooms have a nuttier taste.
Preheat the mini pan: Add one teaspoon of olive oil to your pan. The temperature should be 130 Celsius. Egg rings also work. Crack the egg open and drop it into the pan before it gets hot. Make sure to drop the egg gently so that the egg yolk does not pop.
Wait for the egg white to turn white. While it is turning white, put the heat on the lowest temperature. When the egg is white, cook for another 1 or 2 minutes. Slide the egg onto the plate. When you are on your second egg, re-add one teaspoon of olive oil.
Cook sausages: Cook your sausages in the pan on medium heat (160 Celsius/320 Fahrenheit) until they turn golden brown. After the sausages have browned, remove them and set them aside. Meanwhile, cook your baby tomatoes.
Cook your mushrooms: Brown the mushrooms; this should take four to five minutes. Season your mushrooms lightly with salt and pepper. Serve with some buttered toast, garnished with chopped parsley. White pepper adds a smooth taste, while black pepper offers a more pungent flavor.
Room-temperature eggs cook faster, and your egg yolks do not risk being overcooked. Use a non-stick pan. For perfectly round Sunny-side eggs, use a mini pan. For the best Sunny-side up eggs, cook on medium to low heat. Butter adds more flavour.
