Using fresh ingredients for the spring roll wrappers and filling is vital to a delicious experience. Choose high-quality spring roll wrappers. To make spring rolls, the wrapper should be firm enough to fold easily and retain its shape. The right condiments will ensure that the filling is full of flavour; some key ingredients include Oyster sauce, paprika powder, salt, and ground pepper, which form the foundation of the beef mince. Adding in sweet corn adds a touch of sweetness and crunch. Green bell peppers add an earthy flavour. Fresh parsley adds freshness. Use All-purpose flour as the paste to glue the spring rolls together. You can substitute beef mince for chicken mince and shrimps, or make it entirely vegetarian with cubes of tofu and your favourite veggies!
Begin by heating the pan to medium heat and adding a tablespoon of oil. Add the chopped onions and sauté until caramelized, about 3 minutes. Add the garlic and repeat the process.

Add the minced beef and cook for ten minutes. Then, add the spices and oyster sauce. Once the beef is browned, incorporate the sweet corn, parsley, and green bell pepper.

Remove the pot from the heat and let it cool before assembling the spring rolls. If frozen, thaw the spring roll wrappers; they will take approximately 20 minutes to reach room temperature. Prepare a clean surface or use a plate. Gently peel the spring roll wrappers from the edges. High-quality spring roll wrappers, such as Spring Home, will peel easily. In a small bowl, add two teaspoons of flour and three tablespoons of water. The flour paste acts as a natural glue to seal the edges of the wrapper and ensure that the spring rolls are tightly sealed.

Place the spring roll wrapper in a diamond shape on your work surface. If you are using small spring roll wrappers, use two teaspoons of beef mince filling and increase accordingly for different-sized wrappers.

Spread three dots of flour paste on the top and bottom of the diamond-shaped spring roll wrapper. Next, fold the bottom corner of the wrapper over the minced filling and add a small drop of flour paste to the edge to help seal it. Then, apply flour paste to the inside corners of the wrapper at both the top and bottom. Press down to seal the corners securely.
Fold the two side corners in to create an envelope shape, then roll the spring roll wrapper tightly. Repeat this process with the remaining wrappers. In a frying pan, heat about 1 inch of vegetable oil over medium heat. Carefully place a few spring rolls in the pan, then reduce the heat to medium-low. Fry the spring roll for three minutes on the thick side and two minutes on the thin side.

Once the spring rolls have browned and turned crispy, turn them over. Remove the spring rolls from the oil and onto a plate lined with paper towels. Let them rest for a few minutes. Enjoy with your favorite hot sauce, a squeeze of lime juice, or a drizzle of soy sauce.
Spring rolls can be made ahead of time and frozen. The right wrapper is crucial to ensure success. Avoid rice paper wrappers as they are not suitable for freezing. To make rolling and sealing easier, keep the filling compact and avoid overfilling. If you are making a large amount, stack prepared rolls on top of each other to prevent them from sticking together. You can also bake the spring rolls in the oven. To bake the spring rolls, preheat the oven to 200°C and bake for 15-20 minutes. At the halfway mark, turn them over. Drizzling the spring rolls with a little oil will enhance the crispiness. You can use a variety of different vegetables, herbs, and proteins to enhance the flavour. Different dipping sauces, such as sweet chili, hot, hoisin, or tangy peanut, will give the spring rolls an unusual flavor.

Store uncooked spring rolls in the freezer; they have a long shelf life and can last for more than three months. Make sure to add the spring rolls to a tray and pre-freeze them for 30 minutes to 1 hour. Remove them from the freezer and place them in a freezer-proof container. If you skip this step, the spring rolls will be difficult to separate during frying. It will tear and compromise the wrapper’s exterior. Pre-freezing will prevent the spring rolls from sticking together.
