Brownies serve as an excellent pick-me-up treat and are particularly enjoyable when accompanied by a hot cup of coffee or a soothing cup of tea. Some people like them more cake like and others prefer them with a fudgy center. Fudgy brownies are known for their rich and gooey texture, and characterized by a profound chocolaty flavor.

In fact, there is significant difference in ingredients between the two. Fudgy brownies contain a higher ratio of butter and chocolate, whereas cakey brownies incorporate more flour and baking powder. The origin of brownies can be traced back to an anecdote regarding their creation as portable cakes. As the story goes, a housewife in Bangor, Maine, inadvertently left out the baking powder, resulting in the invention of brownies.
The fundamental components of fudgy brownies—butter and chocolate—impart richness and moisture. The sugar-to-egg ratio is critical for achieving a glossy, crackly top, while the eggs contribute to the desired gooey center. Enhancements such as a pinch of salt and a dash of vanilla essence serve to elevate the chocolate flavor and balance the sweetness.
One of the key components of Fudgy brownies is the process of melting the butter, this ensures that the sugar is completely dissolved. It is noteworthy that the temperature of the melted butter influences the dissolution rate of the sugar—the hotter the butter, the more rapidly the sugar will dissolve. For superior results, one should utilize high-quality chocolate; preferences may vary between dark and milk chocolate.
It is imperative to avoid over-baking the brownies. Upon completion of the baking time, remove them from the oven. Preheat the oven to 180ºC. Gather all the ingredients. Roughly chop the milk chocolate, setting aside 50 grams for later use as toppings. In a large stainless steel bowl, sift together the dry ingredients, including flour, salt, brown sugar, and cocoa powder.

Melt chopped chocolates and butter in separate bowls in the microwave. Pour the sugar into the melted butter and stir until fully dissolved, with no visible granules.

Once the sugar has completely melted into the butter, add the eggs and vanilla extract. Whisk the eggs to combine them with the other ingredients. Next, pour the melted chocolate into the butter and egg mixture, and mix the wet ingredients thoroughly until well combined.

Pour the wet ingredients into the bowl of sifted dry ingredients. Mix them thoroughly until the mixture is uniform in color. Prepare a casserole dish by greasing the inner surface with butter. Line the dish with parchment paper, then pour the fudgy brownie mixture on top. Transfer the dish to the oven and bake for 25 minutes.

When the brownies are done, let them cool, then leave them in the refrigerator for 3 hours. You can also have it rest in the deep freeze if you prefer a caramel consistency of the brownie.
