Squeeze the juice of one lemon and one orange into a bowl. Slice the onion and garlic cloves. Wash the chicken, add it to a baking tray. Add the onions, garlic, chicken and the juice into the baking tray, add the spices and mix well. Marinate in the fridge for thirty minutes.
Add the baby potatoes, sliced baby tomatoes and the black olives to tray and bake for 45 minutes at a temperature of 160 Celsius. During the baking process, make sure to baste the top of the chicken to ensure that the chicken remains moist. Serve on a plate with a few slices of orange and garnish with parsley.
