Prepare the ingredients: Squeeze the juice of one lemon and one orange into a bowl. Slice the onion and garlic cloves. Wash the chicken, and add it to a baking tray. Add the onions, garlic, chicken, and juice to the baking tray, then add the spices and mix well. Marinate in the fridge for thirty minutes.
Bake the chicken: Add the baby potatoes, sliced baby tomatoes, and black olives to the tray, then bake for 45 minutes at 160 °C. During the baking process, baste the top of the chicken to keep it moist. Serve on a plate with a few slices of orange and garnish with parsley.
