What types of noodles do you recommend for this recipe?

Fried noodles can be made from wheat, rice, or other grains. If you’ve bought noodle brands before, you may be familiar with them. These noodles are popular in Chinese, Thai, and Indonesian cuisine. For instance, Indomie noodles come in many fried noodle varieties. You won’t need to use the seasoning packet that typically comes with ramen noodles. It’s best to avoid thick egg noodles, as they won’t pair well with the marinade. Instead, choose thin egg noodles. You can purchase any type of noodles from the supermarket for this recipe, including plain instant noodles.

Fried noodles, Garlic Cloves, Onion, Carrot, Dark soy sauce, Rice Vinegar, Leeks, Black Bean paste, Sugar, Sesame seed oil.

Fried noodles are essential to this recipe. For an authentic soy sauce noodles dish, other types of noodles cannot be substituted. Fried noodles are readily available; many popular noodle brands offer them along with seasoning powder. Since this recipe is unique and uses its own marinade made with rice vinegar, dark soy sauce, brown sugar, and sesame seed oil, we will leave out the seasoning packet that comes with the fried noodles. Caramelized onions, leeks, and carrots enhance the dish’s texture and flavour. When it comes to soy sauce, two excellent brands are Yamamori Dark Soy Sauce and Lee Kum Kee Dark Soy Sauce.

For rice vinegar, avoid regular white vinegar, as its flavor tends to be overly sharp and tart. A good substitute is either apple cider vinegar or rice wine vinegar. Despite its name, rice wine vinegar does not contain any wine or alcohol. It is made in a manner similar to rice wine, but rice wine undergoes a second fermentation process, during which the alcohol is transformed into vinegar.

Instructions

Clean the aromatics, such as the onion, garlic, and green leeks; mince the garlic cloves, slice the onion, and set them aside. 

In a bowl, add Oyster sauce, Sesame seed oil, Dark soy sauce, Rice vinegar, and Brown sugar, then mix. Add olive oil to a pan and sauté the garlic, leeks, carrot, and onion on medium-low heat for five minutes. Add 400 ml of water to a pot and bring to a boil. Cook the noodles for two minutes on medium-high heat.

Drizzle olive oil over the ribeye steak, then add garlic powder, salt, and ground black pepper. Add 1 teaspoon of the marinade to the steak and cook. The steak will take only 5 minutes to cook fully on medium-low heat. Gently toss to combine, then cook for 2 more minutes, stirring continuously.

How do you store Soy sauce noodles?

Allow the noodles to cool before storing them in the fridge. Soy sauce noodles are quick and easy to prepare when you are short on time. We don’t recommend freezing this recipe. You can cook the aromatics, such as the leeks, onions, carrots, and garlic. Thereafter, store them in a container in the fridge. This step is helpful if you’re busy. To reheat the soy sauce noodles, add them to a wok or pan on medium-low heat. You can also reheat the noodles in the microwave.

What can you serve with Soy Sauce Noodles?

Consider serving a simple salad alongside the soy sauce noodles, such as crunchy cucumber salad, Buchu kimchi, or spring onion kimchi.

Do you cook noodles like pasta?

Cooking noodles is similar to cooking pasta. The basic idea of preparing both is quite similar. Boil the water, add salt, add noodles, and drain the water. However, the boiling time for noodles will be shorter than that for pasta. Usually, pasta takes 8 to 12 minutes to cook, while fried noodles take 2 to 4 minutes. Follow the instructions on the packet, as noodles require different cooking times. It is also important not to overcook the fried noodles; overcooking will result in a mushy texture. To add moisture to the noodles, add butter or reserve some starchy water to rehydrate them.

Can I use Beef in this recipe?

Using Beef will add additional flavour to this dish. The best Beef cuts in this dish are ribeye, chuck, sirloin, or rump. These cuts are flavourful and tender, making them easy to eat with the noodles. 

Expert tips

Add the noodles to the boiling water and stir to ensure they are completely submerged. Leave a little water in when draining to prevent the noodles from sticking together. When the noodles are cooked, add them directly to the sauce rather than letting them rest after draining. This will allow the sauce to absorb into the noodles immediately.

Marinade

  • 1 Tbsp Oyster sauce
  • 1 Tbsp Dark Soy sauce
  • 1 Tbsp Rice vinegar
  • 1 ½ tsp Brown sugar
  • 1 Tbsp Sesame seed oil

Aromatics

  • 20 grams Garlic cloves – Sliced
  • 60 grams Onion – Sliced
  • 40 grams Leek – Sliced

Spices

  • ½ tsp Salt
  • ½ tsp Ground black pepper

Instructions

  • The marinade: Clean the aromatics, such as onion, carrots, garlic, and leeks; mince the garlic cloves, slice the onion, chop the carrots into cubes, and slice the leeks. Prepare a bowl and add oyster sauce, dark soy sauce, rice vinegar, brown sugar, and sesame seed oil, and mix them.
  • Cook the aromatics: Add olive oil to a pan and sauté the leeks, carrots, garlic, and onion on medium-low heat for five minutes. Once caramelized, they are ready—season lightly with salt and black pepper.
  • Fried noodles: Add 400 ml of water to a pot and bring to a boil. Cook the fried noodles for two minutes on medium-high heat.
  • Cook all the ingredients: Add the cooked fried noodles, the aromatics, and the rest of the marinade sauce. Gently toss to mix everything, and cook for two more minutes while stirring continuously.
