Soy Sauce Noodles

Today, we’re making my favorite Soy Sauce noodles. This is my go-to comfort food when I want takeout. If you like Asian cuisine, you’ll enjoy this recipe.

Soy Sauce noodles

This dish uses simple ingredients and is quick to make. It takes just 15 minutes, which is great for movie night. You can also add sautéed vegetables, scrambled eggs, chicken, tofu, or shrimp to customize it.

For the noodles, you can use fried noodles made from wheat, rice, or other grains. Popular brands, like Indomie, offer various fried noodle options. Don’t use the seasoning packet that comes with ramen noodles. Avoid thick egg noodles, as they won’t work well; instead, choose thin egg noodles. You can buy any type of noodles from the supermarket, including plain instant noodles.

Fried noodles, Garlic Cloves, Onion, Carrot, Dark soy sauce, Rice Vinegar, Leeks, Black Bean paste, Sugar, Sesame seed oil.

Fried noodles are key to this recipe. You can’t substitute them with other types of noodles. They are easy to find at many stores, often sold with seasoning powder. Since we’ll make our own marinade using rice vinegar, dark soy sauce, brown sugar, and sesame oil, you won’t need the seasoning packet. Caramelized onions, leeks, and carrots add texture and flavor to the dish. For soy sauce, consider using Yamamori Dark Soy Sauce or Lee Kum Kee Dark Soy Sauce.

When it comes to rice vinegar, avoid white vinegar because it’s too sharp. A good substitute is either apple cider vinegar or rice wine vinegar. Even though it has “wine” in the name, rice wine vinegar doesn’t contain alcohol. It is made similarly to rice wine, but rice wine goes through a second fermentation process that turns the alcohol into vinegar.

Instructions

Clean the aromatics, such as the onion, garlic, and green leeks; mince the garlic cloves, slice the onion, and set them aside. 

In a bowl, add Oyster sauce, Sesame seed oil, Dark soy sauce, Rice vinegar, and Brown sugar, then mix. Add olive oil to a pan and sauté the garlic, leeks, carrot, and onion on medium-low heat for five minutes. Add 400 ml of water to a pot and bring to a boil. Cook the noodles for two minutes on medium-high heat.

Drizzle olive oil over the ribeye steak. Then add garlic powder, salt, and ground black pepper. Use 1 teaspoon of marinade on the steak and cook it. It will take about 5 minutes to cook fully on medium-low heat. Gently toss to mix everything, then cook for 2 more minutes while stirring continuously. Soy sauce noodles is a simple dish that combines the rich flavor of soy sauce with the sweetness and freshness of sautéed vegetables. This mix creates a delicious combination that satisfies your taste.

How do you store Soy sauce noodles?

Let the noodles cool before refrigerating. Soy sauce noodles are quick to prepare. Avoid freezing this recipe. Cook aromatics like leeks, onions, carrots, and garlic in advance and store them in a container in the fridge for convenience. To reheat, use a wok or pan on medium-low heat.

What can you serve with Soy Sauce Noodles?

Consider serving a simple salad alongside the soy sauce noodles, such as crunchy cucumber salad, Buchu kimchi, or spring onion kimchi.

Expert Tips

Cooking noodles is quite similar to cooking pasta: boil water, add salt, and then the noodles before draining. Noodles generally require a shorter cooking time, typically 2 to 4 minutes, compared to pasta’s 8 to 12 minutes. Always check the packet for specific times to avoid overcooking, which can lead to a mushy texture. To add moisture, you can use butter.

Using beef can enhance the flavor of the dish, with cuts like ribeye, chuck, sirloin, or rump being ideal for their tenderness and taste. Stir noodles in boiling water to keep them submerged and retain a little water after draining to prevent sticking. Add cooked noodles directly to the sauce for better absorption.

Ingredients

  • 150 grams Fried noodles
  • 2 Tbsp Olive oil – for cooking

Marinade

  • 1 Tbsp Oyster sauce
  • 1 Tbsp Dark Soy sauce
  • 1 Tbsp Rice vinegar
  • 1 ½ tsp Brown sugar
  • 1 Tbsp Sesame seed oil

Aromatics

  • 20 grams Garlic cloves – Sliced
  • 60 grams Onion – Sliced
  • 40 grams Leek – Sliced

Spices

  • ½ tsp Salt
  • ½ tsp Ground black pepper

Instructions

  • The marinade: Clean the aromatics, such as onion, carrots, garlic, and leeks; mince the garlic cloves, slice the onion, chop the carrots into cubes, and slice the leeks. Prepare a bowl and add oyster sauce, dark soy sauce, rice vinegar, brown sugar, and sesame seed oil, and mix them.
  • Cook the aromatics: Add olive oil to a pan and sauté the leeks, carrots, garlic, and onion on medium-low heat for five minutes. Once caramelized, they are ready—season lightly with salt and black pepper.
  • Fried noodles: Add 400 ml of water to a pot and bring to a boil. Cook the fried noodles for two minutes on medium-high heat.
  • Cook all the ingredients: Add the cooked fried noodles, the aromatics, and the rest of the marinade sauce. Gently toss to mix everything, and cook for two more minutes while stirring continuously.
