The marinade: Clean the aromatics, such as onion, carrots, garlic, and leeks; mince the garlic cloves, slice the onion, chop the carrots into cubes, and slice the leeks. Prepare a bowl and add oyster sauce, dark soy sauce, rice vinegar, brown sugar, and sesame seed oil, and mix them.
Cook the aromatics: Add olive oil to a pan and sauté the leeks, carrots, garlic, and onion on medium-low heat for five minutes. Once caramelized, they are ready—season lightly with salt and black pepper.
Fried noodles: Add 400 ml of water to a pot and bring to a boil. Cook the fried noodles for two minutes on medium-high heat.
Cook all the ingredients: Add the cooked fried noodles, the aromatics, and the rest of the marinade sauce. Gently toss to mix everything, and cook for two more minutes while stirring continuously.
