Ingredients
250gramsPenne Pasta
300gramsCherry tomatoes
2tbspCooking oil
4tbspPasta water
3tbspButter
1/2cupHeavy Cream
1/4cupGrated Parmesan Cheese
Spices
1tbspCajun Spice
Herbs and Aromatics
7Garlic cloves - minced
½Red Onion
Instructions
Prepare the ingredients: Slice the cherry tomatoes in half. Preheat the oven to 200ºC/400ºF. Add the cherry tomatoes. Sprinkle some black or white pepper and olive oil on top of them. Gently toss around and bake in the oven for twenty minutes.
Cook the pasta: Add about two litres of water to the pot, add a pinch of salt, and bring the water to a boil. Cook the pasta to al dente for nine minutes. Reserve three tablespoons of pasta water.
Cook the aromatics: Add cooking oil to the pan with butter, and add the onions and garlic. Sauté for eight minutes until caramelized. Add the Cajun spice and mix well. Add the heavy cream. Mix again. Simmer for two minutes on medium-low heat. Add the parmesan cheese and mix.
Mix the Sauce and Pasta: Pour the creamy sauce into the pot of penne pasta. Gently toss to coat the pasta. Add the roasted tomatoes and serve with grated cheese and finely chopped parsley.
