Instructions
Wash and Prep the Chicken: Begin by washing, and cleaning the chicken. Pat dry with a kitchen towel. Slice the skin side of the chicken, in order for the marinade to seep into the meat.
Marinate the Chicken: Add the rosemary, 1 teaspoon of olive oil, cajun spice and 1 teaspoon of the minced garlic and white pepper.
Cook the Chicken: Preheat the pan on medium high heat. Place the chicken thighs on the pan, with the skin side directly on the heat. Cover with a foil or grill pan lid. Grill for 8 minutes. After 8 minutes, flip the chicken and cook for another 8 minutes. Cover with foil again. Lower the temperature to medium low heat and cook for 2 minutes on each side of chicken. Set aside your chicken thighs on a separate plate.
Create the creamy base: Mince the garlic. Slice the onions.Add your onion and garlic in the same pan that you cooked the chicken. Make sure that the onion and garlic is browned and caramelized. In a different pot, add 1 cup of water, 200 ml of heavy cream, paprika powder, thyme, salt and chicken stock cube. Add in the caramelized onion and garlic. Let it simmer for five minutes on medium high heat. The sauce is not supposed to be too thick. If you wish to thicken it, you can add in ½ teaspoon of flour and stir rigorously. Add in your chicken and serve.
