Cardamom Biscuits
These fragrant cardamom biscuits are buttery, delicate and lightly crisp, with the warm, floral flavour of ground cardamom. Inspired by Persian and South Asian biscuit traditions, they make a lovely accompaniment to tea or coffee.

Instructions
Dry ingredients:
Sift flour, semolina, cardamom powder, bicarbonate of soda, and baking powder into a bowl.
Wet ingredients:
Melt ghee in the microwave for 30 seconds and add to the bowl with two egg yolks and condensed milk. Mix until combined.
Dough:
Form a soft dough; do not overmix. Roll into 5 mm balls and gently flatten. Place on a parchment-lined baking tray.
Bake:
Preheat oven to 190°C; bake for 5 minutes. Lower temperature to 150°C and bake for 20 minutes.
Cool down:
Leave cookies in the warm oven for 15 minutes, then cool and transfer to a container.
