Beef Quesadilla is a delicious, easy and quick snack to prepare for a busy afternoon. The best part about this Beef Quesadilla filling is that it takes a short time cook up and it can be stored in freezer and made to eat on the day, all you would have to add is cheese and the filling into the tortilla.

Ingredients
300gramsBeef mince
6Flour Tortillas
Vegetables
1Green Bell Pepper
200gramsSweet Corn
4Garlic cloves
2Red Chilies
1/2White or Red Onion
1cupParsley
Spices
28gramsTaco seasoning
70gramsTomato paste
180gramsMozzarella and Cheddar Cheese
3TbspOlive oil.
Instructions
Caramelize: Add olive oil. Brown the onions in a pan. (This will take 5 to 10 minutes on medium high heat). Remove from the pan and set aside. Add the finely minced garlic and chili, brown for approximately 5 minutes.
Beef Mince: Add the Beef mince, taco seasoning and caramelized onion into the pot.
Add the Vegetables: Add the tomato paste, green bell pepper and sweet corn. Mix and cook for five minutes.
Filling: Scoop onto one side of the tortilla. Add the cheese and parsley. Fold into half and press down.
Grill: Toast on pre-heated grill pan (Set to medium high heat) for approximately two minutes per side or until the cheese melts. Make sure to constantly check to make sure that the bottom side of the quesadilla is not getting burnt. You can gently raise the quesadilla with a flat spatula to check on it.
