Prepare the ingredients: Rinse the chicken thighs, and dab them dry with a kitchen towel, and place them in a single layer on a baking tray.
Add oil and Cajun spice: Pour the cooking oil on top of the chicken, as well as under the chicken. Generously and evenly sprinkle the Cajun spice on the chicken thighs. Add salt after tasting the baked chicken, as the Cajun spice already contains salt.
Bake the Cajun chicken thighs: Preheat the oven to 200ºC or 400ºF. Place the baking tray in the oven and bake the chicken for fifty to fifty five minutes. After baking for forty minutes, check if the chicken is getting burnt or undercooked, and then adjust the temperature accordingly. Make sure to keep the oven fan off and have the chicken uncovered.
Serve immediately: Serve the baked Cajun chicken immediately with side dishes.
