Bruschetta

Today, we are making bruschetta, an Italian appetizer made with rustic Italian bread or a sourdough loaf. This appetizer is perfect for occasions when you have guests coming over, or you want a light snack to enjoy on a relaxing afternoon.

Mushroom Bruschetta is made with sautéed mushrooms, garlic, thyme, olive oil, salt, and pepper. Olive Tapenade Bruschetta consists of a mixture of olives, capers, garlic, olive oil, chopped parsley, and lemon zest. To add an Asian flair, consider using soy sauce or hoisin sauce to season the cherry tomatoes and replacing the cream cheese with sharp, aged cheddar. You might also want to top it with slices of fresh figs.

Bruschetta is an elegant and easy appetizer to prepare at home, and it comes together quickly. Start with sliced olives, as their briny flavor complements the juicy cherry tomatoes. A splash of balsamic vinegar adds a warm, tangy note to the dish. Fresh basil contributes a unique fragrance to the French baguette, which should be buttered and toasted to perfection in the oven. Finally, a layer of ricotta cheese adds a delightful creaminess to the bruschetta.

Instructions

Cut the cherry tomatoes in half and place them in a bowl. Add the green olives to the bowl as well. Slice the basil into thirds and place it in the bowl. Prepare the baguette by slicing it 1.5 cm (0.6 inch) thick.

Cut the baguette at a slant to increase the surface area for more toppings. Spread butter on the sliced baguettes, then toast them until golden and crispy.

Prepare the toppings by placing all the vegetables in a bowl. Drizzle olive oil and balsamic vinegar over the vegetables, then sprinkle with salt and white pepper. Gently mix the ingredients from the bottom up. Next, spread cream cheese onto the buttered, sliced bread.

Top the baguette slices with the vegetable mixture, being careful not to overfill them, as this can make them difficult to eat. Bruschetta is best served immediately.

How to Store the Brushetta?

Store the vegetable toppings in a separate container without the balsamic vinegar and spices. This will ensure it stays fresh for a longer period. If making for a large crowd, only assemble an hour or two before it is needed.

Expert tips

Although bruschetta uses simple ingredients, such as tomato, basil, and butter, they must be fresh and colorful to bring out the best taste of bruschetta.  Toasting the bread to a golden brown will enhance crispiness and accentuate the combined flavor of bread and butter. In this recipe, we’ve chosen to use cream cheese instead of ricotta. It creates a much more elegant and sophisticated dish. It is also easier to eat when you use cream cheese instead of ricotta cheese. Using the freshest ingredients will also elevate the recipe’s flavor. If you’re out of balsamic vinegar, you can substitute it with Worcestershire sauce.

What can you serve with Bruschetta?

Pasta dishes like alfredo or arrabbiata would pair wonderfully with this appetizer. You might also enjoy a Caesar salad with grilled chicken, a Greek salad with feta cheese, or a simple green salad. A warm soup of any kind can add to the comfort after a delicious plate of bruschetta. For a satisfying full-course meal, consider finishing with grilled meat or seafood after the bruschetta. Ingredients

  • 1 Baguette – slice diagonally into 1/2-inch thick rounds

Vegetables and Herbs

  • 300 grams Cherry tomatoes – sliced
  • 20 grams Basil leaves – cut into thin ribbons
  • 40 grams Olives
  • 5 tbsp Cream cheese

Spices and Condiments

  • 1 tbsp Olive Oil
  • 1 tbsp Balsamic vinegar
  • ¼ White pepper
  • ¼ Salt
  • 50 grams Butter

Instructions

  • Cherry tomatoes and Olives: Halve the cherry tomatoes and place them in the bowl. Add sliced olives into the bowl.
  • Basil: Slice the basil into thirds and place them in the bowl. Prepare the baguette by cutting them into 1.5cm / 0.6 inch thick slices. Spread butter on the sliced baguettes and toast them until they turn golden in colour. Add the cream cheese on the sliced bread.
  • Toppings: Add all the prepared toppings into the bowl. Drizzle olive oil and balsamic vinegar, sprinkle salt and white pepper in the bowl and gently mix them from bottom-up. Place the toppings on the sliced baguette and serve.
