Today, we are making sunny-side up eggs. If you’re looking to achieve golden yolks and soft whites, you’ve come to the right place. A simple meal of eggs, sausage, baby tomatoes, mushrooms, and a slice of buttered bread can create a spectacular breakfast feast that rivals those served at five-star hotels.

Just picture it: golden yolks of eggs waiting to be dipped in with your freshly toasted bread. Add in some mushrooms and sausages, and you have an English breakfast. The key to the best sunny-side-up eggs is low heat, timing, and the other techniques used in this recipe. The fresher the eggs, the better the whites. For perfect circular, sunny-side-up eggs, use a mini fry pan that fits one egg, or invest in egg moulds.

Select fresh, free-range eggs for your dishes. Fresh eggs have a vibrant yellow yolk and a firm texture, enhancing the flavor of your meals. Eggs from hens raised in natural environments are tastier but also more nutritious. A fun way to test an egg’s freshness is to place it in a bowl of water. A fresh egg will sink, while older eggs will float. Interestingly, older eggs are ideal for hard boiling.
Cherry tomatoes are a delightful addition to any recipe, offering a sweet and tangy flavor that caramelizes beautifully when heated. If cherry tomatoes are not available, you can substitute them with regular tomatoes. Additionally, consider adding green bell peppers, which provide a mild crunch and an earthy undertone.
Choose your favorite type of sausage or whatever you have on hand. For a lighter option, try chicken or beef sausages, both of which have rich flavors. Sausages seasoned with garlic, herbs, or fennel can enhance the taste of sunny-side-up eggs. When it comes to mushrooms, you can use white button mushrooms or brown mushrooms.
Add one teaspoon of olive oil to your pan and set the temperature to 130 degrees Celsius. You can use egg rings if you have them. Crack the egg open and gently drop it into the pan before it heats up, taking care not to break the yolk. Wait for the egg white to turn completely white.

While this is happening, reduce the heat to the lowest setting. Once the egg white is fully cooked, continue to cook for another 1 or 2 minutes. Then, carefully slide the egg onto a plate. When you cook your second egg, remember to add another teaspoon of olive oil.
Cook the sausages in a pan over medium heat (160°C/320°F) until they are golden brown. Once the sausages have browned, remove them from the pan and set them aside. In the same pan, cook the baby tomatoes.

Sauté the mushrooms for 4 to 5 minutes, until browned. Lightly season them with salt and pepper. Serve the mushrooms with buttered toast and garnish with chopped parsley. White pepper offers a subtle flavor, while black pepper provides a bolder taste.
Room-temperature eggs cook faster, so your egg yolks are less likely to overcook. Use a non-stick pan. For perfectly round Sunny-side eggs, use a mini pan. For the best sunny-side-up eggs, cook on medium to low heat. Butter adds more flavour.
Store in the fridge for two to four days. Reheat on the stove or in the microwave.
